Our garden tomatoes turned out plentiful and delicious this year. Tonight's chili will be made from homemade tomato sauce. Here's how I made the sauce:
Ingredients
- ~2200g (5lbs) ripe tomatoes, cored and quartered
- 2 tbsp unsalted butter
- 2 tbsp olive oil
- 1/2 tsp black pepper
- 2 tsp salt (add more to taste at the end)
- 6 cloves of garlic, minced
- few leaves of fresh basil
Insturctions
- In a blender (I used a Vitamix) blend tomatoes into a puree. Pour into a large bowl.
- In a large pot, melt butter over medium-high heat.
- Add the garlic and cook until fragrant, 30-60 seconds.
- Stir in the tomato puree, salt and pepper.
- Bring to a boil, stirring frequently.
- Reduce heat to medium-low and simmer for 60 minutes.
- Remove pot from heat and stir in the oil and basil.
- Add salt to taste
